Book Review: Hungry Girl 1-2-3

We borrowed Hungry Girl 1-2-3 from the library for the summer reading and review program!  I picked it because it offered "light bites" and didn't seem too ingredient heavy.  If some of the recipes look long it's because lighter cookbooks up the spices to add flavor to cover the fact that there's not fat.  (Because we all know fat is what hold all the flavor!!)

My husband browsed through the book and was pretty impressed.
He requested:

Pumpkin Cheesecake French Toast Bites (Page 290)

And I made it so!

BUT... it was a pain in the neck!  It took a ton of dishes too...

Not that I generally mind, or do, dishes...
but this was all for one single serving!
This book is geared towards the single lady of good taste.  It would be a pain to adapt these recipes for large families.

I'll put up the steps it took to do four quick pieces.

The main characters.
"Egg" Mix... recipes are heavy on egg substitute.

Pumpkin Cream Cheese Mix

Spread on hot dog bun...

Pam & two teaspoons margarine.

Fry all sides

As you can see- it was tasty!  I wanted to hate it because it was a lot of work but... it was delicious!!  Didn't even end up making any for the husband.  It would have been an appetizer for him anyway.

So, I would say for the single gal, who enjoys a tasty, healthy bite and owns a dishwasher... this is the cookbook for you!
